This Tardia from Herdade das Servas certainly leans into the dramatic – perhaps a touch too readily generous with its grapes. The noble rot, combined with a late November harvest, has resulted in a complexity that’s bordering on the bizarre: think orange marmalade, sea holly and honey, a combination that defies all reason. It boasts a substantial body and a velvety texture, reminiscent of top-quality honey, with a persistent finish that’s frankly, a little *too* long for a white wine from the Alentejo. Perhaps best enjoyed with a very careful pairing of sheep’s cheese.
