Herdade do Peso: Let there be peace, for an Alentejo secret is about to unfold. Let calm, time and quietness guide you to appreciate at the table the body and soul of Vidigueira. Let Alentejo Peace create space amid daily bustle and let you feel the unique rolling plains of Herdade do Peso, that singular place where this wine is born. Listen to it, breathe it, savor it without haste. The name says it all. The Herdade do Peso Sossego red is a wine with balanced tannins, acidity and fruit that grants it versatility to accompany pasta, pizza and white meats. The grapes used in this wine were produced in accordance with the guidelines of Integrated Sustainable Agricultural Production, as defined by the International Organization for Biological Control of Harmful Organisms (OILB/IOBC): www.iobc-wprs.org. The rigorous compliance with these practices is certified by an independent organization recognized by the Portuguese State. Vinification: The wine is produced from grapes from selected plots harvested at their optimum phenolic and aromatic ripening point. After destemming and gentle crushing, it fermented in stainless‑steel vats at a controlled temperature of 26 °C for eight days. Once the desired organoleptic balance was achieved, the must was pressed. The result is an intense, elegant wine that expresses the region well. After malolactic fermentation, the wines aged for six months in stainless‑steel vats, then underwent slight fining and filtration before bottling.
