This Hess Collection Chardonnay from the Su’skol vineyard is a remarkably considered wine – clearly aiming for a restrained elegance. Predominantly crafted from the musqué clone, it’s a delicate affair, with 70% fermented in stainless steel to maintain that bright pear and green apple freshness. The remaining 30% was touched by new French oak, but just enough to add subtle complexity, without veering into over-extraction.
