Fermented in a cement tank, the must receives a small addition of wine spirit shortly after fermentation begins. The wine undergoes a six‑month winter maceration, remaining in contact with the skins before they are removed. The skins are pressed, and the resulting pressed wine is separated. Since 1999, the wine has been aged in oak. Longevity: stored under good conditions, it has the potential to improve for many years.
