This Malvasia Fina, affectionately known as “Infinitude,” seems to have sprung straight from an enologist’s daydream – one clearly obsessed with expansive views of the Serra de Sintra. Despite being planted on a plateau somewhat removed from the coast’s invigorating breeze, the grapes thrive under generous sunshine and the occasional Atlantic embrace. The clay-calcareous soils, just 5km from the coast, lend a wonderfully intriguing mineral character. The winemaking, featuring an open “bica” (headspace) and spontaneous fermentation, speaks of a daring approach and a trust in the native yeasts. A remarkable 18-hour decant was clearly crucial to the final result – a genuinely beautiful wine perfect with grilled fish and seafood.
