“This Burgundy certainly knows how to make an entrance. The grapes, carefully hand-harvested and transported in 20kg wooden crates, underwent a meticulous ageing process worthy of a monastery. Twenty-four days of temperature-controlled contact with French oak barrels – impeccably monitored, we’re told – were followed by eighteen months in new *barris* barrels within a cellar reputed to have exceptional acoustics. It seems the Chapter of Notre-Dame possesses discerning taste, and this wine certainly reflects that. A splendid pairing would be with duck or wild mushrooms.”
