This Jaffelin Ladoix seems to be a producer with a fondness for the finer things – hand-picked grapes, followed by gentle pneumatic pressing. The use of around 30% new oak certainly indicates a commitment to letting the Merlot and Cabernet Sauvignon flavours shine through. That extended lees stirring (10 months!) suggests a restless spirit, a wine that simply won’t settle down. It would pair beautifully with some rich foie gras, no doubt.
