The hand-pushed ‘ripanço’ fermentation – yes, really, by hand – imparts a wonderfully unexpected note of exotic spices. Think dates, hay, and plums, all beautifully framed by a touch of oak, leaving a remarkably long and lingering finish. Seriously, this would be superb with a good roasted lamb – a pairing that really does honour the wine’s ancient soul.
