This Líquen from the Dão certainly seems to have taken its time – and perhaps that’s a good thing! Harvested by hand with the meticulous care you’d expect, and fermented using native yeasts, it possesses a wonderfully distinctive character. The 18 months spent ageing in French oak have layered in a lovely complexity, making it a brilliant match for game dishes or a mature, firm cheese.
