This “Líquen” from the Dão relies on the wild power of native yeasts for a fermentation that’s surprisingly complex. Following a solid 14 months aging in both French and local oak barrels, it delivers a white wine that’s anything but timid. A very sensible choice for pairing with fresh fish or seafood, really.
