This “Duet” from Louis Latour – a rather bold combination of Chardonnay and Viognier – clearly enjoyed a calm upbringing in stainless steel tanks, carefully maintained at a temperature that no doubt discouraged any exuberant outbursts. Following a period of softening, it’s been bottled and ready to partner beautifully with fresh seafood or, dare I say, a generous helping of pasta with pesto.
