This Licoroso from Bairrada, produced by Sócios, certainly had a bit of a journey to win us over. Classic winemaking techniques, including a careful délestage to ensure purity, combined with fermentation at 28°C, deliver a wonderfully vibrant acidity. The judicious use of old, varied-sized oak barrels adds layers of complexity and subtle nuances, reflecting the wine’s age. Predominantly made with Jaén, which brings ripe red fruit notes, alongside Touriga Nacional for elegance, this is a wine that demands a robust, aged cheese or perhaps a delightful duck with orange.
