Complete destemming and cold pre‑fermentative maceration; fermentation in wooden vats for 5–6 days with temperature control (24–26 °C), followed by 4 days of extended post‑fermentative maceration. It matured for 18 months in new French oak barrels, with three soustirages, and spent 6 months in the cellar after bottling.
