This Monte Cascas clearly arrived straight from the press – no time for a polite pause! The extended cold stabilisation – a full 48 hours – seems to have gently tamed any particularly spirited notes. Fermented at a cool 14°C, with a two-month lees aging, it’s evident the producer favours a rather tender approach, yielding a wine with a distinctly Douro soul. Perfect with grilled fish or oysters, naturally.
