This Monte Cascas, straight from the heart of the Alentejo, clearly had a rather spirited youth. The unfined and unoaked approach, coupled with that 3-day cold soak, speaks of a producer who trusts in nature’s rhythms. The fermentation, climbing from 12°C to 32°, achieves a lovely balance of freshness and body, thanks to malolactic fermentation in used French oak. And the 40% barrel aging adds a subtle spice note – delightful with grilled beef or a slow-roasted lamb, really.
