“This Olho de Mocho Reserva, from the 2019 vintage, was clearly coaxed into existence – picked under the soft light of the early morning between the 28th and 29th of August. It’s a rather mystical approach, featuring a cold maceration for 24 hours, followed by fermentation over 21 days, split between French oak and concrete. The daily battonage – that subtle, daily lees stirring – is said to promise an incredibly rich and complex texture. Absolutely divine with grilled white fish or some wonderfully roasted sardines.”
