This Paços de Infante Reserva is a genuinely intriguing wine – it feels as though a touch of magic went into its creation. The traditional foot-pumping and temperature-controlled fermentation (24°C) in a lagar, coupled with French oak aging on lees, clearly demonstrates a respect for heritage. Yet, the extended bottle aging – a full year – speaks volumes about the producer’s belief in the power of time. It’s exceptional with a hearty pork roast or, perhaps even better, a rich duck rice dish.
