Património Wines The production of wines at Caves Bonifácio starts with a careful selection of grapes. After harvest, they are unloaded into casks, the starting point for two parallel production lines – one for white grapes and another for red grapes. The red grapes, after destemming and crushing, are sent to fermentation tanks, undergoing a cold maceration, followed by fermentation at controlled temperature, with a remontage by leaching of the must. Maceration and fermentation are carried out for the time needed to achieve the colour we choose for our wines: a deep ruby red. Winemaker: Manuel Ezequiel.
