Património Wines The production of the wines from the Bonifácio Cellars begins with a careful selection of grapes. After harvest, they are unloaded into troughs, the starting point of two parallel production lines – one for white grapes and another for red grapes. The red grapes, after destemming and crushing, are transferred to fermentation tanks, undergoing a cold maceration process, followed by temperature‑controlled fermentation and a remontage by mass leaching. Maceration and fermentation continue for the required time to achieve the deep ruby red colour we choose for our wines. Winemakers: Manuel Ezequiel and Adelino Almeida Gomes.
