Vinification: The grapes are hand‑picked and transported in 30‑kg trays. Fermentation is carried out at controlled temperature with punch‑down and extended maceration. The wine ages in new American and French “Allier” oak barrels (300 litres) for 12 months, followed by aging in stainless‑steel tanks until bottling.
