This Porcupine Ridge certainly seems to have enjoyed a lengthy fermentation! Crafted primarily with Cabernet Sauvignon and a touch of Cabernet Franc, it’s imbued with the serenity of the Helderberg mountains. This natural winemaking process, eschewing acidification, concentrates a powerfully earthy fruit character. The brief, nine-month aging in French oak – carefully considered, of course – doesn't detract from its elegant texture and vibrant fruit profile, making it a particularly lovely match with a good selection of sheep’s cheese.
