The chosen name references a question that surely Raúl Bobet pondered when he decided to ferment the entire lot in the ancient stone vats carved by Hospitaller monks in the 12th century. The blend is determined by the harvest, yielding a wine with fresh cherry notes, a hint of cinnamon, and fine, velvety tannins. It will develop its full complexity in bottle, with significant aging potential.
