Quinta Casa Amarela The wine production at Quinta da Casa Amarela follows a meticulous process that prioritises quality. After careful selection, the grapes are vinified in granite vats and hand‑pounded. Once fermentation begins, intensive maceration is carried out to extract the maximum from the grape skins. The vats are equipped with a cooling system so that fermentation proceeds under strict temperature control. Vinification: Made from grapes grown on vines older than 65 years. Total destemming, hand‑pounding in granite vats. Alcoholic fermentation in the vat for 6 days, with continuous work and controlled temperature. Malolactic fermentation in stainless‑steel tanks. Afterwards, the wine ages for 12 months in new French oak barrels. Bottling is automatic, with pre‑rinse and inerting. The wine is then stored in the bottle for at least 6 months before release.
