Quinta da Giesta Winemaking: After de-stemming, the grapes undergo a 3‑day cold maceration. This is followed by alcoholic fermentation with a long, gentle maceration and delestage, to extract the maximum potential of the varieties. Stage: Malolactic fermentation took place in new French oak barrels – Allier – where the wine aged for 18 months. It pairs well with game, seasoned stewed meat, smoked meats, bacon/ham, and aged cheeses. Total acidity (in tartaric acid): 5.9 g/L. pH: 3.7. Winemaker: Nuno Cancela de Abreu. Allergen information: Contains sulfites.
