**Quinta da Soalheira** Its name, *Soalheira*, perfectly conveys the warmth we feel when, in the height of summer, we walk its paths. After covering the 5.5 km that separates it from the main road, we can truly grasp what the expression “Deep Douro” means. A narrow road with winding, steep curves opens up to a breathtaking landscape: vineyards surrounded by patches of wild olive trees, *rosmaninhos* and blackberry bushes that stretch up to 500 m above sea level, down to the river bed, which here meanders in a tortuous course. **Vinification and Maturation** Total destemming of the grapes followed by gentle crushing. A brief pre‑fermentative maceration is then carried out, followed by fermentation in a closed vessel for about 6 to 8 days at a controlled temperature of 28 °C, with frequent revolutions. After alcoholic fermentation, the wine is separated from the solids with which it fermented. The wine then undergoes malolactic fermentation in a tank, followed by aging in French oak barrels for 9 to 12 months. **Food Pairing** Excellent with fresh and cured meats, roasts, game dishes, as well as well‑prepared fish dishes such as cod or octopus.
