Quinta da Vacaria Vinification: The Port wine Quinta da Vacaria LBV comes from low‑production vineyards that are over 30 years old. The grapes were transported in 20 kg food‑grade plastic crates and underwent a rigorous sorting process at the cellar entrance. After gentle crushing without pressing, they were sent to a traditional press where men stomped them at regular intervals. A brief fermentation followed, during which the traditional stomping extracted colour, tannin, and flavour from the must. After strict density (Baumé degree) control, wine spirit was added, halting fermentation at the press exit. Maturation: The wine was aged for 4 to 6 years in large oak barrels, then bottled without any filtration or fining, allowing a slight sediment to develop during its ageing. Winemaker: Teresa Pinto.
