**Quinta de Pancas TERROIR** More than 60 hectares of vineyards situated 35 kilometres east of the Atlantic Ocean, planted in a landscape of mountains, hills and valleys protected by the Serra de Montejunto. From this unique terroir come wines that are intense, complex and elegant. **SOIL** Clay‑limestone **VITICULTURE** The grapes that gave rise to this wine come from plots 6 and 17 of Cabernet Sauvignon, old vines about 30 years old, and from plot 1 of Touriga Nacional, 18 years old. The vineyards are located in a sequence of hills and valleys protected by the Serra de Montejunto. The climate is Mediterranean with Atlantic influence. The limestone soil and the steep slopes of these plots provide ideal water stress, resulting in a strong concentration of flavours, colour and acidity, with very small berry size. **WINEMAKING** The grapes were transported to the cellar and processed immediately. After total destemming and very gentle crushing, each variety was vinified separately. The Cabernets started fermentation immediately, with a daily regime of one destemmer and one manual punch‑down until the end of fermentation, then remaining in post‑fermentation maceration for 21 days before fining. Malolactic fermentation took place in new and second‑year barrels, allowing better integration and greater complexity of flavours. The ageing lasted 12 months. The Touriga Nacional from plot 1 underwent cold pre‑fermentation maceration for 3 days and fermented at lower temperatures (24 °C) than the Cabernet. Malolactic fermentation occurred in tanks, preserving a strong aromatic component, freshness and soft tannins.
