**Quinta de Pancas TERROIR** More than 60 hectares of vineyards situated 35 kilometres east of the Atlantic Ocean, planted in a landscape of mountains, hills, and valleys sheltered by the Serra de Montejunto. From this unique terroir springs wines that are intense, complex, and elegant. **SOIL** Clay‑limestone **VINEYARD** The grapes that give rise to this wine come from plots 6 and 17 of Cabernet Sauvignon—old vines about 30 years old—and from plot 1 of Touriga Nacional, 18 years old. The vineyards are positioned in a sequence of hills and valleys protected by the Serra de Montejunto. The climate is Mediterranean with Atlantic influence. The limestone soil and the steep inclines of these plots provide an ideal water stress, resulting in a strong concentration of flavour, colour, and acidity, with very small berry size. **VINIFICATION** The grapes were transported to the cellar and processed immediately. After total de‑picking and very gentle crushing, each variety was vinified separately. The Cabernets started fermentation right away, with a daily regime of one punch‑down and one manual pump‑over until the end of fermentation, then staying in post‑fermentation maceration for 21 days before fining. Malolactic fermentation took place in new and second‑year barrels, allowing better integration and greater complexity of flavours. The ageing lasted 12 months. The Touriga Nacional from plot 1 underwent a pre‑fermentation cold maceration for 3 days and fermented at lower temperatures (24 °C) than the Cabernet. Malolactic fermentation occurred in a tank, preserving a strong aromatic component, freshness, and softer tannins.
