This Monte Xisto Magnum, straight from the heart of the Douro, is a delightfully rebellious wine. Harvested by hand and transferred in 20kg boxes, it carries the unmistakable imprint of the terroir. Fermented on granite lagares with traditional foot-treading, it boasts a purity of expression driven by native yeasts that worked their magic for six days. The nose initially presents an intriguing interplay of slate and rosemary, evolving into a refreshing spiciness laced with aromatic herbs – a clear indication of the wine’s intensity. The texture is particularly noteworthy: a silky sphere envelops smooth tannins, culminating in a long, invigorating finish, ideally paired with a hearty cod dish.
