Quinta do Pessegueiro The 2019 vintage was a dry year, yet a brief bout of rainfall during the harvest period boosted the ripening process. The harvest yielded high‑quality, aromatic musts, generally more acidic than in previous years. Grapes were harvested in September, transported in 22‑kg crates to the cellar, and stored for 12 h in a cold room. They were destemmed, partially crushed, and then gravity‑driven to a granite press where full alcoholic fermentation took place by foot‑pressing. The wine was transferred to a 1 700‑L oval cement vat for malolactic fermentation, ageing the wine for 12 months in the same vessel. It was bottled in May 2021.
