After crushing, the grapes undergo a thermal shock followed by foot‑pressing for four hours in granite vats. The must is then transferred to small‑capacity fermentation tanks with temperature control. In this vintage, 10 % of the wines were fermented with the mash (skins and stems). The grape varieties are vinified separately. The final blend is made before bottling. The wine matures in barrels (60 % new and 40 % second‑year) of 225 litres, French oak. It is very intense in colour. The bouquet displays great depth and complexity, with a wealth of aromatic nuances, each balanced without one dominating the others. On the palate it is vibrant, elegant, with excellent integration of the oak, and a very long finish. Contains sulfites.
