Quinta dos Castelares Each grape variety was vinified and aged separately. Fermentation was carried out in temperature‑controlled vats, with gentle manual racking and alternating mechanical pressing. The goal is to avoid excessive tannin extraction. Malolactic fermentation occurred spontaneously in the barrels. The wine spent 70 % of its aging in new 225‑L French oak barrels and 30 % in new American oak barrels. After 18 months of maturation, the final lot was bottled with only light filtration.
