The grapes are a field blend sourced from the oldest vineyards of Quinta dos Castelares, planted at elevations between 500 and 600 meters on well‑drained soils with a north‑northeast orientation, chosen to achieve the balance required for a complex wine. Harvest is hand‑picked, followed by full destemming and gentle crushing. Fermentation takes place in stainless‑steel tanks where a cold pre‑fermentative maceration is carried out before the alcoholic fermentation. During this period, gentle “pigeages” (small, controlled temperature adjustments) are performed. A post‑fermentative maceration is then conducted to produce a concentrated, aromatic, and elegant wine. The wine ages for 24 months in new French oak barrels of 225 L.
