Quinta dos Poços We give absolute priority to vineyard care to obtain the finest raw material. In the cellar, the grapes are selected on a choice table, fully destemmed and gently crushed. Winemaking—carried out separately by variety or plot—is performed in granite vats with foot‑treading or in stainless‑steel tanks with strict, individual temperature control, thereby matching fermentation temperatures to the characteristics of the musts. We use the highest‑quality French oak barrels for extended ageing periods of 12 to 24 months. After bottling, the wines age an additional 6 to 12 months in the cellar before release to market. Climate: Atlantic with Mediterranean influence Soil: Clayey Winemaker: Eng. Pedro Francisco Vinification: Done in granite vats with foot‑treading or in stainless‑steel tanks with rigorous individual temperature control. Ageing: 12 months in French oak barrels. Pairing: Ideal with stewed meat dishes, game, or aged cheeses. Ideally open one hour before drinking. Longevity: 5 years. After this period, the wine should be decanted before serving.
