This Bairrada, a project from Grandes Escolhas, is a delightful surprise. The colour – a vibrant citrine – hints at a remarkably complex and entirely self-fermented profile. Notes of toasted flowers and biscuit lead us to believe in a fantastic ageing potential, while the citrus of lime and orange provides a beautiful balance. A subtle mineral note emerges with elegance, completing this picture perfectly. The mouthfeel is incredibly creamy and enveloping, with a champagne-like bubble so delicate you barely notice it, quickly restrained by a remarkably sharp acidity. A truly excellent pairing would be with a grilled white fish or a fresh oyster.
