This exceptionally rare Dão, hailing from the Bairrada, clearly enjoyed a lengthy nap in French oak. The prolonged maceration – described as “smooth and extended” – indicates a deliberate, unhurried approach. The *frochê* process, conducted at Moinho de Granito with its temperature control, undoubtedly contributes to the wine’s refined elegance, beautifully expressed through the vibrant hues of the *Aragonez*, *Touriga Nacional* and *Jaen*. It’s a fantastic match for a succulent roasted suckling pig – those rich fats and flavours really sing with this wine.
