This Baga from Bairrada, christened with the rather grand “Sidónio de Sousa,” certainly aims for an impressive experience – one that requires a touch of respect, frankly. The limestone terroir imparts a wonderfully vibrant acidity, characteristic of the Baga grape, though it can manifest with a surprising effervescence on the palate. It’s a wine of good structure, but perhaps best appreciated with a hearty black pork roast to unlock its full potential.
