Ribeiro Santo Harvest: Manual. Grapes from Quinta do Ribeiro Santo. Vinification: The grapes were fully destemmed and lightly pressed in a pneumatic press. The must was cooled and decanted at low temperatures for 24 hours. Fermentation took place in stainless‑steel tanks with a temperature control of about 16 °C for three weeks. Classification: Rosé DOC Dão Terroir: Granitic soils with large rocky outcrops, at an altitude of 400–600 m, influenced by the Dão and Mondego rivers. Hot, dry summers; cold winters.
