Grown from Bical, Arinto and Malvasia Fina, the vineyards, nestled amongst granite slopes with views of the Serra da Estrela, clearly impart their character. A slow, three-week fermentation in stainless steel keeps the fruit perfectly intact, and a lengthy nine-month second fermentation in the bottle delivers a wonderfully refined and elegant mousse.
