This Dão sparkling wine is a beautiful testament to letting the land speak for itself. Grown from Bical, Arinto and Malvasia Fina, the vineyards, nestled amongst granite slopes with views of the Serra da Estrela, clearly impart their character. A slow, three-week fermentation in stainless steel keeps the fruit perfectly intact, and a lengthy nine-month second fermentation in the bottle delivers a wonderfully refined and elegant mousse. Seriously, it’s a match made in heaven with some fresh fish or shellfish – a truly sophisticated pairing.
