This Verdelho from Rocim & Barbeito is a wonderfully old-school affair, clinging steadfastly to techniques reminiscent of bygone eras. The grapes – a generous 92% Verdelho from the Raposeira, Seixal and São Vicente clones – are meticulously macerated cold for two days, a process that feels more like a cherished ritual than a scientific procedure. The addition of 8% Cercial from Seixal adds a layer of subtle complexity, beautifully balancing the wine’s natural sweetness. Bottled exclusively in terracotta amphora, this wine is particularly delightful with white fish and shellfish – a testament to the fact that some secrets are best kept close to the vine.
