This wine, from Herdade do Rocim and crafted in collaboration with Niepoort, feels like it’s stepped straight out of a time machine. Employing the “Nat’Cool” winemaking philosophy – relaxed and unpretentious – it relies on native yeasts and the time-honoured tradition of barro (clay) amphorae, producing a wonderfully rustic white. The blend of Perrum and Rabo de Ovelha grapes, alongside skin contact during ageing, unlocks a surprising level of complexity, perfect with grilled fish and a generous chunk of aged cheese.
