Vinification: After a meticulous selection, the grapes were crushed in granite vats. Indigenous yeasts were used to preserve the terroir’s authenticity. The first phase of fermentation took place in traditional vats, before being transferred to stainless steel at a controlled temperature. It then aged nine months in French oak barrels.
