“This Santa Vitória, born from a spirited blend of Trincadeira, Syrah, Touriga Nacional, and Cabernet Sauvignon, initially seems to have taken a slight detour – a cool maceration lasting just two days. Remarkably, this yielded a refreshingly vibrant wine, fermented on slats at a temperature clearly attentive to the fruit. Following a 14-month aging in French oak, the wine has undoubtedly benefited from this maturation, with the oak adding a welcome smoothness that plays beautifully against the energy of the core grape varieties. It’s a fantastic match for grilled red meats and aged cheeses.”
