It spends a leisurely 12 hours cold-macerating, seemingly contemplating its every move, before being extracted with the finesse of an artist. The extended fermentation – six months at a cool 15-20 degrees – undoubtedly reflects the patience inherent in the blend of Gouveio, Códega, Alvarinho, and Rabigato grapes, perfectly absorbing the character of the region. A wine clearly content with reflection rather than haste, ideal alongside grilled white fish or a selection of fresh cheeses.”
