This Santos da Casa white is a surprisingly robust offering, clearly born of careful cultivation – those 120kg grape crates certainly demanded dedication! The extended maceration at 14°C ensures a beautiful freshness alongside developing complexity, almost as if it’s arguing its case persuasively. Seven months with the lees suggest a deliberate pursuit of acidity and, hopefully, a respectable ageing potential. It’s a wine with good structure, ideally paired with grilled fish and a hearty slice of homemade bread.
