Scala Coeli Alentejo regional wine. The name Scala Coeli derives from the Santa Maria Scala Coeli Monastery (commonly known as the Cartuxa Monastery), the place where Cistercian monks remain in silence and prayer. It is the result of the best vinifications each year of less‑traditional grape varieties in Alentejo and was first produced in 2005. Harvest/Vinification: The wine comes from the finest harvests, using less‑traditional varieties in the region. In 2021 it was vinified from Syrah, harvested on 20 August. The grapes were carefully picked and taken to the cellar for cold pre‑fermentative maceration, followed by alcoholic fermentation at 28 °C and extended maceration. The total encubation lasted 30 days, and the wine aged 15 months in new French oak barrels. Analytical data: Total acidity (g l⁻¹) – 5.4; pH – 3.51; total sugars (g l⁻¹) – 0.9.
