Darioush Inspired by the strength and grace displayed in the great wines of Bordeaux, this Cabernet Sauvignon from the cooler climate of Darioush's southern Napa Valley vineyards exhibits extraordinary depth, character, and balance. Now in its second decade, these vineyards in the Mount Veeder, Napa Valley, and Oak Knoll AVAs have reached their peak, producing fruit of splendid concentration and power, appealing freshness, and graceful complexity. Meticulous attention to detail in the vineyard and minimal intervention in the winery. Hand-harvested into small 28-pound lug baskets. Hand-sorted twice, before and after destemming. Fermentation includes a four-day cold soak in traditional fermenters with gentle pump-overs for optimal color extraction and tannin management. Aged 22 months in new barrels of 85% traditional French oak. The barrel lots were racked two to three times per year for greater clarity.
