This Encruzado from Soito is simply stunning – a straw-coloured gleam hinting at an explosion of aromas: orange blossom, ripe pear, and a refreshing touch of lemon. On the palate, the elegance of the Dão region shines through with remarkable harmony and perfect balance, finishing with a lingering warmth. I’d recommend pairing it with a good sea bass, or, if you’re feeling adventurous, some duck rillette.
