This Sonante, a Dão wine crafted from classic Touriga Nacional, Aragonez, and Joanin grapes, clearly took its creation very seriously. The grapes were gently de-stemmed, and the crushing executed with the precision only a little luck can provide. A brief, 24-hour cold maceration suggests a producer who values subtlety – the result is a beautifully balanced wine with velvety tannins and a lingering finish of ripe cherries and a hint of black pepper. Wonderful with grilled beef or a fine duck breast.
