Sôttal Vinification: The grapes are hand‑picked slightly before their final ripening. They are fully destemmed and gently crushed and pressed to produce a fresh, light must with good acidity. The resulting must, known as “mosto de lágrima” (tear‑must), undergoes static cold settling, is inoculated with selected yeast, and ferments at a controlled temperature around 16 °C for about 20 days. Bottling: It is bottled after a 5‑month aging in stainless‑steel tanks. The Sôttal is ideal for drinking very chilled at any time of day, on its own, with light snacks, or before meals alongside light starters, salads, tapas, seafood cocktails and fruit.
