The producer Sottimano manages five vineyards – Barbaresco, Currà, Cottà, Fausoni, Pajorè, and Basarin – along with Dolcetto Bric del Salto, Barbera Pairolero, and Mate, and produces a red wine from the Brachetto grape. In the cellar, the winemaking follows a distinct philosophy: natural yeasts, extended macerations, and a one‑year “sur lie” ageing to allow malolactic fermentation in line with traditional regional methods.
